Bars, Golyo, & more!

Did you know that we at Caffe Amadeus bake our own pastries?  Yep, we do!  We bake pastries from the from the lands of the former Austro-Hungarian Empire.  Pastries so different, unlike any you've ever had before! 

Many of you have enjoyed, (and many more are doing so even today!), our ever-popular coffee cakes.  We invite you to discover our repertoire of taste-tempting recipes from a land and time long ago! 

You can enjoy them in your beautiful coffeehouse or order ahead for that special event in your home!  We are happy to bake for you!  Due to limitations such as staffing and outside work obligations, (we're still so new!!!), the pastries shown below are available on select days.  In other words, we bake all of the goodies that you see, but you won't see them all at once when you come in.  If you see something that looks good to you today, you should buy it now because we will probably have something different tomorrow!  We bake in small batches - just like we roast coffee beans!  We require a deposit of half-down for special orders.  Thank you!

Walnut Mocha Roulade

So walnutty, So delicious!   First we bake a nice, big, fluffy sponge, which is loaded with freshly-crushed walnuts.   It’s then rolled and filled with a generous batch of our creamy-creamy chocolate mousse using the finest Belgian chocolate and shots of our own freshly-brewed eszpresszo, (from our freshly-roasted beans), for the “mocha”.   A long-time favorite in Austro-Hungarian coffeehouses and, most certainly, a favorite in your coffeehouse – Caffé Amadeus!

Ischler 

   

                                                          

To escape the rigorous duties of being "The Emperor" in Vienna, Franz Josef would retreat to the family house in Bad Ischl, located in the Salzburg mountains.  Accompanying the Emperor was his lady-friend, the actress Katharina Schratt.  Together they would take long walks and talk about all kinds of secret stuff!  They especially loved to munch an Ischler (or two!) made especially for the Emperor by Cafe Zauner, which is still in existance today!  Ischer was said to be the Emperor's favorite cookie - and who could blame him?  At Caffé Amadeus, we create two crunchy almond cookies and smoosh some lovely fruity preserves in between!  These cookies would be great just like this, but we finish them by blanketing them in thick, rich chocolate!  The finishing touch is a garnish of chopped pistachio.  The next time you enjoy an Ischer at your coffeehouse, think of the Emperor and Frau Schratt!

Somloi Galuska  

("Shom-low-ee Ga-loosh-ka")

            

The Somloi Galuska that we make here in Caffe Amadeus is just like the kind Andi remembers from her childhood in Budapest!  This three layered cake dumpling is so delicious with walnuts, preserves, & custard swimming in a rum-chocolate sauce.  We accent this lovely morsel with dollups of freshly made and lightly-sweetend whipped cream!  Somloi is an old Hungarian favorite from the wine town of Somlo in Hungary!  This recipe, as well as all the others you see are made in our kitchen at Caffe Amadeus, by our hands - just for you!

Walnut Crescent Cookies from Pozsony  

   

 

Pozsony Kipfli are crescent-shaped cookies made with sweet yeast dough, filled with a lightly sweetened walnut paste, and rolled with love!  You might be used to seeing these at Christmas time, but these are so good we must have them all-year-round!!!  The crescent shape is said to be patterned after the crescent on the Turkish flag - the cookie being created in celebration of the defeat of the Turks in the seige of Vienna in 1683.  Pozsony was a Hungarian city across-the-Danube river from Vienna; it is in this ancient city Hungarian kings held their coronation ceremonies.  Pozsony, as the city was (and still is) known to Hungarians, was also known to Austrians as "Pressburg".  Today, it is "Bratislava".  Mozart made the trip to the city as young boy.  Constanze Mozart fled to Pressburg with her second husband, the Danish diplomat Georg Nissen, while Napoleon was marrying a Habsburg princess in Vienna and crowning himself "Emperor".   It is said that Constanze was fond of Kipfli.  So much for the history!  This cookie will make you feel like royalty when you enjoy it - bite-by-nutty bite!

Gerbeaud Slices  

 

    

Delicious apricot preserves & walnuts, blanketed by layers of sweet yeast dough & topped with the finest Belgian chocolate!  From the Gerbeaud in Budapest to the kitchen of Caffé Amadeus here in Indiana, Pa, we are so pleased to be able to offer such a tasty & very special old recipe to you!  The famed Gerbeaud Café in Budapest has a storied history and takes a very important place in Hungarian culture.  In 1858, the Henrik Kugler Confectionary was established by Henrik Kugler and later the tradition was carried forward by his apprentice, Emil Gerbaud, in 1884.   Through the years, the old café survived being turned into a stable (during WWI) and communism.  In 1997, it was restored to it's former glory.   We are proud to be able to continue the tradition and very happy for you to be able experience this yummy slice of Austro-Hungarian culture!

Dommayerschnitten

 

At Caffé Amadeus you will be pleased to find this chocolate, apricot-glazed, zucchini-filled Viennese delight!  So moist, this is quite a treat!  Hey, without even realizing it, you get your daily requirement of fruit & vegetables too!  Original recipe from the Café Dommayer, in Vienna!
 

Alma Schnitten

Or… how about a little variation of our own?  The Alma Schnitten features juicy & delicious apples in place of the zucchini!   “Alma” is Hungarian for “Apple”.

is from a very old Jewish-Hungarian recipe.

Hungarian Shortbread Bars

 

A very true story! 

With it’s buttery flavor and sandy texture, this lovely dessert sure turned out a lot different from the recipe we found.  Thank God!  Instead of a dry cake square, we made this into a super-moist, fruit-filled bar!  For it's size, its loaded with so much fruit and preserves that you probably get your daily recommended serving of fruit in one bar.  Really?  I don't know!  What I do know is that they are really, really good!  When we had Les Banos come to speak about his adventures saving lives in WWII, I got a call from a Hungarian lady asking me "what is this HUNGARIAN bar?" that we were featuring that night.  Man, was she tough on me!!!  I had to respect that!  All I could tell her was to come and try it for herself - it's a variation - the kind all good composers love!  Like the coffee cakes and kuglof, we use a variey of fruits, the most popular being strawberry and mixed berry.  We have been known to sell these straight from the baking pan! 
 
Enough stories!  Just like the Hungarian lady, you just have to come and try these when you see them under the glass!

Mandula Golyo!

All Hail the Golyo! 

 

You simply have not lived until you have partaken of the Golyo!  "Mandula" is Hungarian for "Almond"  "Golyo" is Hungarian for "Ball".  Thus, we present to you, the Almond Ball!  This is simply a cake ball, filled with fruit, nuts, and preserves, rolled in almond slices.  European dutch cocoa powder gives a hint of chocolate taste.  Extremely satisfying!

Kokusz Golyo!

You'll go "kokusz" over these! 

 

"Kokusz", (pronounced "ko-koose"), is Hungarian for "coconut"  "Golyo" is Hungarian for "Ball".  This is a cake ball, filled with fruit, nuts, and preserves with a splash (or two!) of golden rum, rolled in coconut flakes.  European dutch cocoa powder gives this a of chocolate taste.  A true Austro-Hungarian favorite!

Karpatia!

Mountains of Love!

 

The Karpatia is named after the Carpathian mountain range which stretches from Central-to-Eastern Europe!  Made from pound cake, lightly sweetened whipped creme, and topped with a delicious coating of the finest Belgian chocolate.  If you put these all together, they will resemble the Carpathian range!  We also give a nod to our favorite restaurant in Budapest - The Karpatia!  You simply must try both, this yummy dessert and our favorite place to dine if you happen to travel to Hungary!

Kinder Pie

 

Kinder Pie is commonly known as a "Peanut Butter & Jelly Pie".   A perfect harmonization of creamy peanut butter, creamy creamy cream cheese, and some whipping cream and confectioner's sugar to balance.  The graham cracker crust is coated generously with a fruit preserve.  We like either strawberry or blackberry to add some contrast.

Schokolade-Bananenschnitten! 

(Chocolate-Banana Slices)

 

Ahhhhhhh!  Chocolate & Bananas (and a little golden rum)!   A Delicious cake sponge, topped with a heavenly combination of chocolate mousse and perfectly aged-sliced bananas, and topped with light chocolate glaze.  Wow!   This one is for all of you who have asked us since we opened to create something with Chocolate and Bananas!   American, yes, but still a very Viennese dessert.

Pumpkin-Rum Drizzle

Holy Smokes!!!  We put six of these out this afternoon and they were gone in 10 minutes!   These pumpkin bars are lightly sweetened with brown sugar and topped with a golden rum faux fandant icing!  So, so yummy!

Kremes!

 

We have waited soooooo long to introduce these wonderful delights to you!   Way tooooooo long!   We offer you thick squares of mouth-watering custard, sandwiched between crisp layers of puff pastry.  Pronounced "Cray - mesh" in Hungarian, they are found in the pastry case of almost every Austro-Hungarian coffeehouse.  
 

   In 1999, when Pope John Paull II made a visit to his hometown of Wadowice, Poland, he mentioned casually that he was very fond of the cream cake or Kremowka.  He said he and his friends in school used to scrape their funds together to buy from one of the bakers in the town's market square.  The next day, "Kremowka" or "Kremowka Papieska", the "Papal Cream Cake" was the order of the day all over Poland!    One of our friends from Poland told us that, even today, you will go to a cafe and they will have a sign for this pastry with includes the disclaimer "the way the Pope likes it!".  Heavenly! 

When Andi was a little girl, she and her brothers and sister would gleefully tell Mama, "Kremes!" when she would ask which pastry they wanted from her visit to the cukrazda!  You will shout for joy too!  (only in English as they spoke Hungarian!) 

We are so pleased to finally come to the point in our cafe where we can offer these exquisite, lightly-sweetened custard squares to you - all the way from the 18th district in Budapest, Wadowice, Poland, and all over central Europe!

Chestnut Puree

 

The Hungarians know this as "Gesztenye Pure".  Chestnut Puree is something out of this world!  At least out of the USA.  Europeans know how to enjoy a desert when they order this in New York Cafe in Budapest, or The Demel in Vienna.  This is a lightly sweetened chestnut puree, coupled with a lightly sweetened whipped cream.  Together, they create a simple, yet very refreshing taste experience!  Why not find out for yourself why so many millions enjoy this desert in Europe?  You can too, just come to Caffe Amadeus!

Strudel Puffs!

 

After you have enjoyed a Strudel Puff at Caffe Amadeus, you will be tempted to sing our Strudel Puff song...  "Strudel Puff, Strudel Puff, Tootie-fruity, Strudel Puff"!  (Click the link!).   This is a slight and very yummy variation on the recipe, using puff pastry as opposed to the more traditional strudel dough; giving the pastry a lighter - melt in your mouth - feel!  We fill the Strudel Puff with the fruit of the day, so you may experience something different each time you drop in.  Pictured above is the Cherry Almond!

Earl-Grey Ganache Cookies

 

This cookie is amazing!  Our friend, Walsa, came up with this recipe and we just had to try it!  An astonishing blend of earl-grey tea and a milk chocolate ganache, sandwiched between two chocolate sugar cookies.  Thanks Walsa, we love you!!!

Schaumrollen Cornets!

 

Puffed pastry cornets with a very special combination of meringue cream & lightly sweetened whipped cream.  These are so lovely, easily the best cream-filled pastry!  Just like most everything else in the Austro-Hungarian baking repertoire, these creamy delights are lightly sweetened, which means they are unlike the over-sweetened version you may have experienced from a grocery store shelf.   We fill these cornets like we do the canolli - entirely - everybody loves to find their cornet is filled completely!   These are, simply put, heavenly!!!
